Week one is done

Well, on Friday Tolan and I both got sick with the flu and the boys were home that day from school because of the flu, too. I wasn't feeling too bad but my throat was starting to get scratchy but I didn't feel horrible, so I made homemade pizzas for us. When we make pizzas we always do personal size ones which the boys love because they get their own pizza. Sajan never finishes his but loves that his pizza is as big as his plate.
Saturday was a different story. Tolan and I had fevers and felt like crap but thankfully we had soup left over and some pizza so that was an easy day.
On Sunday, I really wanted to order something because I felt worse than Saturday but there was NO WAY I was going to fail my own challenge less than a week into it, so we had beans and hotdogs, not what I wanted at all but it fed us. Unfortunately, Camden was up most of Sunday night coughing and I got VERY little sleep. So...
Monday was really the biggest challenge! I didn't feel like eating and just wanted to sleep the whole day. Ever meal idea I thought of was turned down by Tolan or the boys so we finally had a meal of baked potatoes and baked bacon. Yup, that was it. I had one little potatoe and was full. The rest of them loved the meal, even through it was VERY uncomplete by my standard. Baked potatoes are a side dish not a meal, but it worked.


We are all still coughing and a little run down but getting better. I wish I had had more things frozen before I got sick and that would have made meals so much easier.

Last night we had homemade chicken and dumplings and it was GREAT!!! I should have made a double batch and frozen some. When will I learn?

The good thing is that we are stilling to our challenge and having fun coming up with ideas for meals. The boys want to look through cook books to get ideas for fun stuff to make. We have one but I need to check with the library or online and find some more iteams for them to pick from.

But that is the end of week one and we are still on target!
